Designer Jill Cole of Cole Martinez Curtis and Associates led the work across all three phases, and by October 2024 the resort had used that momentum to debut two entirely new dining concepts rather than simply refresh what already existed: La Luz Restaurant and Casa 71 Tequila Lounge.

That distinction matters more than it sounds like it should. A renovated dining room is a facelift. A new restaurant with a new executive chef, in this case Devin Pinto, is a different reservation decision entirely. Here's how the two venues actually differ, since "new restaurant at the resort" tells you almost nothing on its own:

The nightly detail worth knowing if you haven't been back: Casa 71 now runs a standing partnership with Whiskey Del Bac, the Tucson-based whiskey distillery, pouring its spirits as part of a nightly cocktail feature called Sunset Spirit at the resort's lounge. That's not a one-off event you had to catch last spring. It's a running fixture, so you can catch it on a future visit.

The Country Club Runs on Its Own Clock

If your relationship with La Paloma Country Club has settled into "I'll play when it's not brutal outside," you're missing how deliberately the club structures its own hours around the calendar, in ways that shift month to month rather than just flipping between a summer schedule and a winter one.

The club's twilight golf package, which pairs a discounted evening round with a resort room stay, moves its start time nearly every couple of months:

Read that June through August line again. In peak summer, when most people assume the course is functionally unplayable except at dawn, the twilight rate opens after 9 AM, not sunset. If you've been avoiding the course all summer because you thought the twilight rate only applied near sunset, the schedule says otherwise.

Off the course, the club's own dining has its own rhythm separate from the resort's. Montecito Restaurant is the social hub, the room where members land after a round for a drink on the patio or a full dinner under the same mountain views the golf course sells. The Turn sits closer to the driving range, built for a fast breakfast or lunch on the way to or from practice rather than a sit-down meal. Neither of these venues went through the same headline renovation as La Luz and Casa 71, but they're the pieces of the resort corner residents are more likely to already know, which makes the contrast with the newer dining side worth noticing.
